Diet Day #1 (FOR REAL THIS TIME)  

First day of the real deal! I think The South Beach Diet is going to work for me. So far it's agreeing with my stomach, which is NICE because not a day goes by that I have problems. The chicken I cooked for dinner was wonderful and I think John liked it a lot too :) He's not so much for the salad but... I just put extra dressing on his to mask the flavor. :3

We bought probably $200 worth of groceries, plus another $45 worth of weights for toning/strength training, so this is serious business. I had a lot of fun coming home form the grocery store and preparing some yummy spread and awesome salad dressing. And all of the fish we bought, oh my goodness! I had to put a plastic organizing basket in the freezer because of how much salmon and tilapia is stuffed in there.



I'm sort of shocked how much I liked the sugar-free jello. It's delicious! Not as sweet of a treat but it definitely kicked my sugar craving in the butt. Also, I'm having fun playing DDR again. I only did a little bit before work today but hopefully as I work up my pain tolerance (because you seriously NEED IT when you're playing songs above basic! lol) I'll be able to survive longer bouts :)

Breakfast

3 large eggs, over easy

Small piece of ham

Black coffee

 

Lunch

Turkey roll up (Turkey, shallots, and cilantro mayonnaise rolled in a lettuce leaf)

 

Snack

1 reduced fat mozzarella string cheese

About 10 cashews

 

Dinner

Balsamic baked chicken (Rosemary, garlic, salt, pepper, olive oil, balsamic vinegar)

About ½ cup salad (romaine lettuce, cucumber, radish, baby spinach)

2 tbsp garlic-herb vinaigrette


Dessert

Lime sugar-free Jello

 

Recipes:

Cilantro Mayonaise (From “The South Beach Diet” book)

¾ cup low fat mayonnaise

¾ cup (packed) fresh cilantro

1 tbsp fresh lime juice

1 tsp soy sauce

1 small clove garlic

 

Garlic Herb Vinaigrette (My very own recipe!)

I made so much of this because I’ll be using it often. I have it stored in a plastic jar with a spout on the lid.

2 cups olive oil

2/3 cup balsamic vinagrette

1 tbsp diced garlic

¼ tsp white pepper

¼ tsp thyme

¼ tsp oregano

½ tsp salt
